Roasted Zucchini and Summer Squash

If you have a garden, then you know that every summer there will be mounds of squash sitting upon your counter. Most people cook up all sorts of unhealthy things with this fabulous vegetable. Zucchini bread and fritters, or how about fried zucchini? I admit, I have made and even love some of those things. But, in an effort to be more healthy I tried, and LOVE the stuff roasted.

Roasted Zucchini and Summer Squash

  • 1 1/2 pounds of squash
  • 1/2 of an onion sliced thinly
  • 1 T olive oil (optional)
  • 1 t dried thyme
  • 1/2 t salt
  • 1/8 t pepper

Preheat oven to 450 and cut squash into good size chunks. Toss on a baking sheet the oil, squash and onion with spices. Roast for 25 minutes mixing up veggies halfway through.
